People tell me that Thais eat with spoons and forks, like most other countries in Southeast Asia. I’ve also heard that Pad Thai is a bit of an invention for foreigners and that locals don’t eat it much.
Our one trip to Thip Samai in Bangkok challenged both of those assumptions.

The kitchen is out on the sidewalk. Pad Thais are about all they do. And it’s all done assembly line style (yes I know, YUM!) The noodle is cooked on the dining room side of the kitchen.
Across the public pathway, on the street side, they make a very thin omelet…

Most of the people in the dining room look like locals to me. (The country is still in a mourning period for the late King Bhumibol, so a lot of people wear black or white.) And they’re all eating with chopsticks!
